Grilled eggplant and red peppers

Preparing ingredients

  • 2 red bell peppers
  • 8 8 1/2 inch slices eggplant
  • 3 tablespoons evo or white truffle oil
  • tablespoon red wine vinegar
  • 1 tablespoon chopped fresh oregano shopping list
  • 1/2 c. crumbled feta cheese
  • salt and pepper

Making this dish:

  1. Coat 2 red bell peppers, cut into wedges, stems and seeds removed, and 8 1/2-inch slices eggplant with olive oil.
  2. Grill the ingredients in (1)
  3. After dish well done, arrange on a platter.
  4. Top with 3 Tablespoon olive oil and 1 Tablespoon red wine vinegar. Add 1 Tablespoon chopped fresh oregano and 1/2 cup crumbled feta.
  5. Season to taste with salt and pepper

* Take you only 6 minutes to make and this recipe serves 6.
