Non-meat Stuffed Tomatoes

Talking about stuffed tomatoes, we often think promptly of meat for filling or seafoods. Not in this recipe, totally non-meat stuffed tomatoes is created to treat in your diet.

The key secret lies on Barley which seems to be known to make beer or drink.

What are needed ingredients and how to make for 6 servings?

1. 1 tablespoon butter, a pinch of salt  are brought to a boil in a pot with 3 or 4 cups of water.

2. 3/4 cup pearl barley then added and simmer your pot on low heat for 45 to 50 minutes, or until barley is tender and the water is absorbed.

3. Meanwhile, cut 6 large tomatoes into cubes. With a spoon, gently scoop out pulp and save for use in other soups or sauces.  Sprinkle the insides of the tomatoes with salt and pepper and invert them to drain on paper towels.

4. Sautee 1/2 cup pecans, 1/2 cup red onion, 1/2 cup bell peppers (all finely chopped) in a skillet with 2 tablespoons butter for about 3 minutes, or until onions are softened and fragrant. Stir sautéed mixture into cooked barley.

5.  Use a spoon to fill the tomatoes with barley mixture. Line tomatoes in a glass baking dish and add 1/4 cup water to cover the bottom. Bake at 375° F for 20 minutes, then remove from oven.

Garnish each tomato with a pecan half and serve.
