Pancake With Lemon Caramel

Each one will choose an own way to get rid of such dull day or gloomy mood. And I, I go in kitchen! Do you know that I am interested so much in making a new try for old recipes. When cooking, I find relaxed, comfortable and creative.

I specially keen on dessert part. I love the most chocolate cakes, brownies, pudding, and oh, many, many… And this time, I will try something new….Surprise of new version for familiar “Pancake” with Lemon Caramel.

Very simple, very quick! I think that you will love this incredible taste of Caramelized Lemon Pancake.

1. In a large mixing bowl, add 4 cups of all-purpose flour, 2 eggs, 1 cup sugar, melted butter, vanillla extract, milk. Mix well till tender, smooth, and a bit watery.

2. Heat the pan till hot enough to melt 1 piece of butter.

3. Use a large spoon to pour flour mixture.

4. Hold the pan hand and tilt it to make the pancake evenly thin.

5. Wait for about 1 minute till the pancake side brown, flip it to the other side, brown it.

6. Repeat the process with flour mixture left. Ensure that brown both sides of the pancake, then transfer them into serving dish.

7, 8, 9, 10: Make lemon caramel:

Cut 2 lemons into thin slice, seeded.

Use lemon juice from the 2 other lemons.

Put a smaller pan on heat till hot, add butter, a pinch of salt, 1/2 cup of sugar. Cook the ingredients under low heat to make caramel. Stir well to make sure you do not burn your caramel. Seeing the sugar turn into nicely brown, put into lemon slices and bring to boil a little next time.

To taste: pour the lemon caramel over the pancake. Enjoy a bit lemony sauce with sugary, soft pancake in combination. Great.
