Quick Baked Pork Stuffed Eggplants

The combination of two familiar things: eggplants and ground pork makes a favorite dish to your family in weekend dinner. If you have not much time, this quick and simple stuffed eggplants would be a perfect choice for b


1 medium eggplant (choose long fruits)

1/2 pound lean ground pork

1/4 cup chopped onion

1/8 teaspoon pepper

2 cloves of garlic, peeled, finely chopped



Preheat oven at 350°F (175°C)

Wash carefully eggplants, use a sharp knife to cut a line in lengthwise, about ½ inch deep.

In a medium bowl, make pork stuffing, add garlic, pepper, seasonings.

With a small spoon, stuff pork into eggplants.

Line an aluminum paper on the baking trap, put stuffed eggplants over, bake for about 15 – 20 mins.

Remove from oven. When serving, use chili sauce or sour sweet fish sauce (Nuoc mam chua ngot) to dip.
