Vietnamese Cooked Chicken Rice Recipe

This Chicken Rice is originated from Hainanese recipe. Have an opportunity to see Singapore, you can find a good chicken rice meal in many parts of this island city.


1 whole chicken (1.8kg), preferably organic
sliced onions
sliced ginger roots
1 teaspoon sesame oil
2 cups long-grain uncooked rice, washed and soaked in cool water for 10 min or longer
1/2 teaspoon sesame oil


1. Clean the chicken,rub the chicken all over with a handful of salt, getting rid of any loose skin and dirt. Rinse chicken well, inside and outside. Season generously with salt inside and outside. Stuff the chicken with sliced onion and some sliced ginger roots.
2. Place the chicken in a large stockpot and fill with cold water to cover by 1 inch. Bring the pot to a boil over high heat, then immediately turn the heat to low to keep a simmer. Cook for about 30 minutes more. When the chicken is cooked through, turn off the heat and remove the pot from the burner. Lets cool the chicken pot, then take the chicken out, remove onion and gingers. Keep the chicken broth for the rice.
3. Meanwhile, drain rice in a medium pan. Heat 1 tsp of vegetable oil, pour rice into pan and add some sliced ginger to make rice a ginger aromatic.
4. Pour fried rice into rice cooker, add 2 1/2 cups of your reserved poaching broth and salt. Turn on cooker and rice will be done within 15 mintutes.
5. There are two ways to serve this chicken rice: The first way is cut chicken into serving pieces and arrange them on large serving dish next to cooked rice, use soy sauce for dipping or chilli sauce.
The second way is bone the chicken, tear chicken meat into small pieces and put all into a medium bowl, mix it well with 2 tsp lemon juice, 1/2 tsp sugar, 2 tsp soy sauce. Now, you can serve your Chicken Rice as you want.
