Layers of crunchy Triscuits sandwich a chicken and vegetable filling in this down-home casserole shared by Margaret Carlson of Amery, Wisconsin. "A friend served this deliciously different dish for an evening meal and I couldn't resist asking for the recipe," she says.

1 package (9-1/2 ounces) Triscuits
2 cups cubed cooked chicken
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 package (10 ounces) frozen chopped asparagus, thawed and drained
1 can (8 ounces) sliced water chestnuts, drained
1 can (4 ounces) mushroom stems and pieces, drained
1/2 cup mayonnaise

Steps:

  • Break two-thirds of the crackers into bite-size pieces; place in a greased 2-1/2-qt. baking dish. Top with chicken; spread soup over chicken. , In a large bowl, combine the asparagus, water chestnuts, mushrooms and mayonnaise; spoon over soup. Crush remaining crackers; sprinkle over the top., Bake, uncovered, at 350° for 30-40 minutes or until heated through.

1 pound lean ground beef (90% lean)
2 cups cut fresh asparagus (1-inch pieces)
1 can (8 ounces) sliced water chestnuts, drained
1/3 pound sliced fresh shiitake mushrooms
1 teaspoon minced garlic
2 teaspoons sesame oil
2 tablespoons cornstarch
1-1/2 cups beef broth
1/3 cup hoisin sauce
2 tablespoons reduced-sodium soy sauce
1 teaspoon minced fresh gingerroot
1 large tomato, chopped
Hot cooked rice, optional

Steps:

  • In a large skillet or wok, cook beef over medium heat until no longer pink; drain and set aside. In the same pan, stir-fry the asparagus, water chestnuts, mushrooms and garlic in oil for 5 minutes or until crisp-tender. , In a small bowl, combine cornstarch and broth until smooth. Stir in the hoisin sauce, soy sauce and ginger. Pour over vegetables. Return beef to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in tomato. Serve with rice if desired.

Steps:

  • Place asparagus in bottom of a baking dish.
  • Top with water chestnuts and soup.
  • Top with buttered bread crumbs and bake at 350 degrees F.

1/2 c tiny frozen shrimp
1 pkg vegetable soup mix
1 c asparagus, finely chopped
1/4 c water chestnuts, diced
1/2 c cream cheese, room temp
wonton wrappers
soy sauce, optional

Steps:

  • 1. Preheat oven to 350.
  • 2. In medium bowl combine shrimp, cream cheese, envelope Vegetable Soup Mix, asparagus and water chestnuts.
  • 3. Place 2 teaspoons of the mixture on the center of each wonton wrapper.
  • 4. Moisten corners with water, fold wrappers in half to form a triangle, and press edges to seal.
  • 5. Place on baking sheet and bake until golden brown.
  • 6. Serve, if desired, with soy sauce.
