Caribbean Pork and Jasmine Rice image

1 cup uncooked jasmine rice
1 pound pork tenderloin
1 small red onion, coarsely chopped
1 teaspoon Caribbean jerk seasoning
1 medium sweet potato, peeled, cut lengthwise in half, then cut crosswise into 1/8-inch slices
1/2 cup water
1 cup snow (Chinese) pea pods (4 ounces)
1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
1/4 cup lime juice
2 tablespoons honey
2 teaspoons cornstarch

Steps:

  • Cook rice as directed on package.
  • While rice is cooking, cut pork cross-wise into 1/8-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add pork, onion and jerk seasoning; stir-fry 3 to 4 minutes or until pork is brown.
  • Stir in sweet potato and water. Cover and cook over medium heat 5 minutes. Stir in pea pods and pineapple chunks. Cook 2 minutes, stirring occasionally.
  • Mix reserved pineapple juice, lime juice, honey and cornstarch until smooth; stir into mixture in skillet. Heat to boiling, stirring constantly. Boil and stir 1 minute. Divide rice among bowls. Top with pork mixture.

1 white onion, chopped
2 carrots, chopped
1 (14 ounce) can pineapple chunks, drained
1 (14 ounce) can water
1/4 cup barbecue sauce
1 teaspoon ground ginger
1 green bell pepper, chopped
2 cups uncooked MINUTE White Rice

Steps:

  • Cook tenderloin in oil in a large skillet.
  • Add onion and carrots and cook until pork is no longer pink inside.
  • Stir in pineapple, water, barbecue sauce, ground ginger, bell pepper, and rice.
  • Bring to a boil; cover and let stand 5 minutes.

4-6 pork loin steaks or whatever cut you prefer
1 tin of chopped tomatoes
1 red onion diced
1 carton of coconut cream
1 cup of chicken stock
1/2 tsp cinnamon
1 tsp ground allspice
1tsp ground coriander
1tsp garlic granules
1tsp ground ginger
good dash of rum or malibu (optional)
1tbs oil

Steps:

  • cut pork into bitesize pieces and fry in oil
  • add chopped onion and tinned tomatoes
  • and all spices stir well and cook for a few minutes
  • add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutes
  • serve with rice.. preferably rice and peas...enjoy

2 teaspoons oil
3/4 cup shredded coconut
1/2 cup onion, minced
2 cups rice
4 cups chicken broth
1 firm ripe mango, peeled and cubed
1/4 cup fresh chives, minced

Steps:

  • Heat oil in a large saucepan and add coconut.
  • Cook, stirring constantly until very lightly browned Add minced onion.
  • Continue cooking and stirring 1 minute longer.
  • Add rice, stir to coat.
  • Add broth and bring to a boil.
  • Cover and reduce heat to low.
  • Simmer 25 to 30 minutes until rice is tender.
  • Remove from heat and stir in mango.
  • Sprinkle with chives.

  • Add the pork to the bowl of your crockpot. Add the crushed tomatoes, ketchup, chili powder, cumin, smoked paprika, cinnamon, all-spice, cayenne pepper, orange juice, soy sauce and molasses. Cover and cook on low for 7-8 hours or on high for 4-6 hours. Shred the pork in the crockpot and toss with the sauce. Discard and fatty pieces.
  • About 30 minutes before you are ready to eat make the rice. Add the coconut milk and coconut water to a medium size pot. Bring to a low boil and then add the rice, salt, unsweetened coconut and coconut oil. Stir to combine, then place the lid on the pot and turn the heat down to the lowest setting possible. Allow the rice to cook ten minutes on low and then turn the heat off completely and let the rice sit on the stove, covered for another 20 minutes (don't take any peeks inside!). After 20 minutes remove the lid and fluff the rice with a fork. Add the lime juice + zest, carrots and green onions, toss. Add a handful of cilantro and toss once more.
  • Divide the rice among plates. Add a tortilla/pitta to each plate and top with shredded pork. Toss on some plantain chips/tostones. Serve with extra mango, shredded coconut, lime and sliced avocado.
