DARK CHOCOLATE HOT COCOA

Dark Chocolate Hot Cocoa image

I was messing around in my kitchen one day and was craving hot cocoa. Since I only had dark chocolate on hand, I used that, and for a festive touch added cinnamon. Pour into a mug and top with whipped cream or marshmallows, if desired. Serve hot.

Ingredients

1 cup whole milk
1 ½ teaspoons brown sugar, or to taste
2 ounces dark chocolate (such as Moser Roth® 85% Dark Chocolate), or to taste
1 tablespoon heavy whipping cream, or more to taste
1 pinch ground cinnamon, or more to taste

Steps:

Heat milk in a saucepan over medium heat until just before boiling, 3 to 4 minutes. Add brown sugar and stir until dissolved, about 1 minute. Stir dark chocolate into milk until melted, 2 to 3 minutes. Remove saucepan from heat and stir cream and cinnamon into milk mixture.

Ingredients

1 cup chopped dates
¾ cup boiling water
1 teaspoon baking soda
¼ cup margarine
¾ cup chocolate chips
1 egg
½ cup white sugar
¾ teaspoon salt
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 teaspoon baking powder

Steps:

Place dates in a small bowl with boiling water and baking soda. Let stand until cooled. Melt chocolate chips with margarine in a bowl over a pan of simmering water, or in the microwave. Stir frequently until smooth.
In a medium bowl, beat egg and stir in sugar, salt and vanilla. Stir in the melted chocolate and date mixtures. Combine the flour and baking powder, and stir into the date mixture until just blended. Scrape into a greased 9x5 inch loaf pan. Let stand for 20 minutes while you preheat the oven to 350 degrees F (175 degrees C).
Bake for 1 hour in the preheated oven, until a toothpick inserted into the crown of the loaf comes out clean. Cool for 10 minutes before removing from the pan. Wrap in aluminum foil, and refrigerate overnight, as the loaf will cut better on the second day.

Preheat oven to 325°F. Line a loaf pan with parchment paper and spray with non-stick spray. Set aside.
In a medium bowl combine the butter, chocolate chips, and coffee. Melt in the microwave for 30 – 60 seconds or until the chocolate is melted. If your coffee is freshly brewed you can just pour it over the chocolate and butter and the heat of the coffee will melt everything. Add the cocoa powder and whisk until smooth.
In a large bowl vigorously whisk together the eggs and sugar for 2 minutes, until the sugar is mostly dissolved and the eggs begin to lighten in color. Add in the yogurt, vanilla, and chocolate coffee mixture. Sprinkle flour, salt, baking powder and baking soda over the top and whisk gently, just until no dry flour remains.
Pour batter into prepared loaf pan and bake on the middle rack for one hour and ten minutes, or until a cake tester inserted into the thickest part comes out with only a few moist crumbs attached, but no uncooked batter.
