HAM AND POTATO SOUP (NO MILK OR CREAM)

Ham and Potato Soup (No milk or cream) image

This is a very easy potato soup that tastes creamy - but without any cream or milk. It's very versatile and can be made with a variety of veggies and meats - or is great with only potatoes. This is an adaptation of what a friend gave to me as a Weight Watchers recipe.

SWEDISH MEATBALLS WITH SECRET INGREDIENT

Swedish Meatballs With Secret Ingredient image

When I was growing up there was a chain of Swedish Smorgasbord restaurants in the area which I lived. It wasn't until about 10 years ago that I met the original owner of that chain at a private party in the last remaining restaurant in the chain. He cooked the foods for this party himself with his son who at that time was the manager of that one remaining establishment. One of the dishes that he served, personally to the 20+ persons invited, was his Swedish Meatballs. They were the absolute best tasting meatballs I ever ate. I took him aside and asked him quietly..."is the wonderful taste in these meatballs the fennel seeds in the sauce?" He smiled and whispered back..."yes that is my secret for making the best Swedish meatballs". I came upon a recipe for Swedish Meatballs at Group Recipes.com that sounded so similar to that recipe so I wanted to post this version for the ZWT #6 2010 Scandinavian Region.

DANISH RED BERRY PUDDING WITH CREAM

Danish Red Berry Pudding With Cream image

This is a classic Danish dessert. I like it because it is so versatile, you can use the fruit on hand. For me it would include some rhubarb, because it grows well here, and I love it! Posted for ZWT9

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 1/2 lbs fruit (red currants, black currants, raspberries, strawberries, rhubarb, or a combination)
3 cups water
1 cup sugar
1/4 cup cornstarch, dissolved in 1/2 cup cold water
1 cup heavy cream (plain or sweetened and whipped)

Steps:

  • Clean the fruit well; chop rhubarb, if using, into 1-inch pieces. Place into a nonreactive saucepan and cover with 3 cups water. Simmer over medium low heat until the fruit falls apart. Remove from heat and strain juice through cheesecloth or a fine-meshed sieve; dispose of the pulp and seeds.
  • Return juice to heat, stir in sugar, and bring to a low boil; reduce heat to medium and add the dissolved corn starch liquid to thicken. Stir the mixture constantly until it begins to gel to the consistency of a heavy syrup. Remove from heat, pour into individual serving bowls, cover with plastic wrap, and refrigerate for at least two hours
  • Serve chilled with either plain or whipped cream.

EASY FRUIT JUICE TAPIOCA PUDDING

Easy Fruit Juice Tapioca Pudding image

This is my version of the fruit juice pudding recipe on the Minute Tapioca box. I omitted the sugar from the original recipe which I think is rather unnecessary. Topping the pudding with corn flakes adds a great crunch. Also add chopped nuts and dried fruit if you like. Note: Prep. time includes time taken for cooling.
