1/2 cup butter, softened
1/2 cup confectioners' sugar
1 cup all-purpose flour
1/2 cup oats
4 large eggs
1 1/4 cups sugar
2 teaspoons orange zest
2/3 cup orange juice
1/2 cup all-purpose flour

Steps:

  • Heat oven to 350ºF.
  • To make the crust, beat butter with electric mixer until creamy. Add confectioners' sugar; beat well. Then,add combined flour and oats; beat on low speed until crumbly.
  • Press crumbs firmly and evenly onto bottom of Greased 9 x 13 pan. Bake 20 minutes, until light golden brown. Remove from oven. Reduce heat to 300ºF.
  • While the crust is baking, prepare the filling. Beat eggs, granulated sugar and orange zest until well blended. Add juice; beat to combine. Add flour and mix just enough to combine. Pour filling over warm, baked crust.
  • Bake the crust with filling until filling is set, about 40 minutes.
  • Cool in pan 30 minutes. Cover and refrigerate.
  • To serve, cut into bars. You may choose to garnish with more orange zest or confectioner's sugar.

After reading so many recipes on here for 7 Layer Bars, I decided to post my tried and true recipe for these delicious things. They are chewy and crisp and yummy and gooey. You will not be disappointed with these. They are my Christmas baking tradition because they are so darn easy to make. No mixing bowl!

1/2 cup unsalted butter, melted
1 cup graham cracker crumbs
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1 cup pecans, Coarsely Chopped
1 cup shredded coconut
1 (12 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350° degrees Fahrenheit.
  • Melt butter; pour into the bottom of a 9 by 12 baking pan.
  • Pour graham cracker crumbs over butter; pat down.
  • Add the chocolate chips, butterscotch chips, pecans, and coconut in the order listed, sprinkling in an even layer.
  • For the final layer, pour the can of sweetened condensed milk over the entire top.
  • Bake at 350 degrees Fahrenheit for 25 to 30 minutes until top is nice and and golden.
  • Cool completely and cut into bars.
  • ** Tip:" I go to my local Dollar Tree store and buy the Aluminum sheet pans they have there. They are not quite 9X12 but something like 11 ½ x 2inches deep. They work wonderfully.

My mom got this recipe 30 years ago from a friend of hers who was from Australia. I don't know if this is an Australian dessert, I have heard that it is similar to a Canadian dessert called Nanaimo bars, though. This is a Christmas tradition in my family, but is wonderful anytime!

2 cups graham cracker crumbs
1 cup flaked coconut
1/2 cup chopped nuts
1 large egg, beaten
1/2 cup butter, melted
1 teaspoon vanilla extract
5 tablespoons sugar
1/2 cup baking cocoa (not sweetened)
1 lb powdered sugar
3 1/2 ounces instant vanilla pudding (1 small box)
1/3 cup melted butter
milk, as needed
1 drop yellow food coloring (optional)
1 (12 ounce) package chocolate chips
1 tablespoon butter

Steps:

  • First Layer - Mix all ingredients together to form a crumbly mixture.
  • Press into the bottom of a 9 x 13" pan, pressing firmly.
  • Place pan in the freezer to set while preparing the next layer.
  • Second Layer - Mix the first three ingredients together, using enough milk to make a stiff, frosting-like consistency.
  • If desired, add a drop of yellow food coloring.
  • Do not add too much milk, you want the mixture to be pretty stiff, but still spreadable.
  • Remove the pan from the freezer and scrape the second layer onto the first, spreading as evenly as possible, and then using your hands to press down to smooth.
  • Return pan to freezer.
  • Third Layer - Melt the chocolate chips together with the butter. You can use a double boiler, but I have had good luck using a small saucepan and very low heat, with stirring.
  • Remove the pan from the freezer.
  • Pour the melted chocolate mixture over the second layer.
  • Working quickly (before the chocolate sets), spread the chocolate layer evenly.
  • Return the pan to the freezer for no more than a few minutes. You want the chocolate to begin to set before you cut the bars - but if you wait too long, the chocolate will be too hard and you won't be able to cut through it without it breaking. The point at which the chocolate loses its shine and takes on a dull appearance is the right time to remove the pan from the freezer and cut into small squares.
  • After cutting, return to the freezer to harden completely, then remove from the pan.
  • Store in the refrigerator.

2 (20 ounce) packages refrigerated sugar cookie dough
1 (21 ounce) can blueberry pie filling
2 teaspoons sugar (I like to use large sugar crystals, and have even used colored sugar)

Steps:

  • Heat oven to 425°F.
  • Press one roll of cookie dough into a 13x9 pan.
  • Spread blueberry pie filling over dough.
  • Break off pieces of remaining roll of dough and scatter over filling (you'll need about half the roll).
  • Sprinkle with sugar.
  • Bake 13-17 minutes or until golden.

  • Add butterscotch chips.
  • Add coconut.
  • Add chopped pecans.
  • Pour sweetened condensed milk over top.
  • Gently shake pan.
  • Bake for 25 minutes.
