WHOLE HEARTH SOUP
A wonderful soup recipe that was emailed to me from My Daily Moments newsletter and created by the MDM team. Fat free vegetarian soup that will warm us in the cold weather or be a light meal for those of us in warmer weather.

Steps:
- Coat a large saucepan with nonstick cooking spray. Add carrots, onion, and garlic and saute over low heat until softened, approximately 5 minutes.
- Stir in broth and add the cabbge, beans, tomato paste, basil, oregano, and salt. Cover saucepan and bring mixture to a boil.
- Lower heat and simmer while saucepan is covered for approximately 15 minutes or until green beans are tender. Add the zucchini and cook until heated or 3-4 minutes. Serve immediately.
SACRED HEART SOUP
My friend Meredith gave me this recipe - it is supposedly from the Sacred Heart Diet. It's a great soup & you can add just about any veggie to it. I've added a can of zucchini in tomato sauce & it was good. It also calls for an envelope of Lipton Chicken Noodle soup mix (comes in a box) but I couldn't get Zaar to recognize it.

Steps:
- Combine all ingredients in a large pot. Don't forget to add the Lipton Chicken Noodle soup mix!
- Season with salt, pepper, garlic powder, parsley, italian seasonings, curry - whatever you prefer. You can also add beef bouillon and some Lea & Perrins.
- Cover with water. Boil fast for 10 minutes.
- Reduce to a simmer and cook until veggies are tender.
- If it's too bland, add more spices!

WHOLE TOMATO SOUP
This unusual soup makes a great light lunch, or a starter for a nice dinner. From the Junior League of Charleston, West Virginia.

Steps:
- Peel the tomato. Cut the celery into 1" pieces.
- Combine the bouillon cubes and water until dissolved.
- Melt the butter in a small saucepan. Add the whole tomato, bouillon, and celery. Sprinkle with salt, pepper, cayenne and basil to taste.
- Cover and simmer 30 minutes.
- Remove celery. Serve tomato in broth in a large soup plate.
